Chicken Burrito Bow

Brown wooden bowl with chips and bottle

INGREDIENTS:

  • 6 oz. Buddig Southwestern-Flavor Chicken Breast Strips
  • 1 can white corn kernels, drained
  • 1 can black beans, drained
  • 1 ½ cups cooked long-grain white rice
  • ¾ cup lettuce, chopped
  • ½ cup shredded Monterey Jack cheese
  • ½ teaspoon garlic powder, or to taste
  • salt and ground black pepper to taste
  • 8 oz jar salsa
  • ½ cup sour cream

DIRECTIONS:

  • Let's get that grill going! Preheat it to medium heat and don't forget to give the grate a little love with some oil.
  • Now it's time to season those chicken breasts to perfection with a dash of garlic powder, salt, and black pepper. Get ready to grill them up until they're cooked through and no longer pink in the middle. We're talking about roughly six minutes per side. Want to make sure your chicken is cooked to perfection? Stick an instant-read thermometer into the center and make sure it reads at least 165 °F (74 °C).
  • Once that chicken is done, cut it up into bite-sized pieces or strips. Then it's time to warm up some corn and black beans in separate saucepans. Cover them up and let them heat through over medium-low heat for about five minutes.
  • It's time to layer on the goodness! Start with some cooked rice, then pile on that delicious corn, black beans, and chicken. Top it all off with some mouth-watering Monterey Jack cheese, fresh lettuce, tangy salsa, and creamy sour cream.
  • Dig in!
