Ingredients

  • 3 oz. Buddig Original Turkey
  • 3 slices whole wheat bread, toasted
  • 2 tbsp. basil pesto (store-bought works)
  • 4 slices of tomato
  • 1 avocado, sliced thin

Directions

  • Spread the pesto on each slice of toasted bread. Layer with turkey and tomatoes, then top with sliced avocado.
  • Serve cold or lightly toast in a panini press to heat up.

No Mayo Turkey Pasta Salad

Ingredients

  • 6 oz. Buddig Original Turkey
  • 3 cups pasta (uncooked)
  • 6 radishes, sliced
  • 2 onions, diced
  • 1 cup basil leaves, torn
  • 1 tbsp. olive oil
  • 1 carrot, grated
  • 1 celery stick, diced
  • A handful of mint leaves, torn (optional)
  • 3 tbsp. tahini
  • 1 tsp. apple cider vinegar
  • 1 tsp. maple syrup
  • 4 tbsp. water (adjust to taste)
  • Salt and pepper to taste

Directions

  • First, make the sauce by combining the tahini and water. Thin out the mixture with more water if you find it too thick. Add the apple cider vinegar and maple syrup then set aside.
  • Drizzle a pan with olive oil and brown the turkey slices for a few minutes on each side. Set aside.
  • Heat a pot of water to a rolling boil and add the pasta. Cook as per package instructions, then drain and rinse in cold water.
  • Chop the fried turkey and place it together with the cooked pasta, radishes, onions, basil leaves, carrot, celery, and mint (if using) in a bowl.
  • Toss the ingredients together with the prepared tahini sauce until everything is evenly coated. Taste the salad before adjusting the seasoning with salt and pepper, if needed.
  • Serve with a side of crackers or crudités for a low-fat snack that will keep everyone happy and full.

 

Turkey and Apple Quesadilla

Ingredients

  • 3 oz. Buddig Original Turkey, chopped
  • 2 whole wheat tortillas
  • 1 apple, cored and thinly sliced (we like HoneyCrisp for this recipe but other varieties will work too)
  • ¼ cup low-fat Monterey Jack cheese
  • 2 tbsp. low-fat Greek yogurt

Directions

  • Lay one tortilla flat and top with the chopped turkey, apple slices, and cheese.
  • Place the second tortilla on top to form a quesadilla.
  • Heat in a non-stick pan over medium heat until golden brown and the cheese is melted.
  • Slice into wedges and serve with low-fat Greek yogurt for dipping.

 

Easy Turkey Tacos with Avocado and Lime

Ingredients 

  • 3 oz. Buddig Original Turkey, chopped
  • 6 low-carb whole wheat tortillas
  • 2 avocados, halved and sliced
  • 1 lime, halved
  • 1 red onion, diced
  • 1 jalapeño, chopped roughly
  • ¼ cup low-fat cheddar cheese, chopped
  • 1 cup low-fat Greek yogurt

Directions

  • Wrap the low-carb tortillas in a damp cloth and heat in the microwave for 30 seconds.
  • Fill each tortilla with turkey, avocado slices, red onion, jalapeño, low-fat cheddar cheese, and a generous squeeze of lime juice.
  • Serve warm with low-fat Greek yogurt as a dipping sauce or some hot sauce for an added kick.

 

Turkey and Zucchini Sliders with Beet Tzatziki

Ingredients

  • 8 Buddig Original Turkey slices
  • 1 small beet, trimmed, peeled, then grated
  • 1 cup Greek yogurt (divide into ¾ and ¼ cup)
  • 1 tsp. dried dill
  • 1 and ½ tsp. garlic, minced (divide into 1 and ½ tsp.)
  • ½ freshly ground black pepper (divide into two portions of ¼ tsp.)
  • ½ zucchini, grated
  • ½ yellow onion, grated
  • 1 tsp. dried oregano
  • 8 whole-grain slider buns
  • Cooking spray
  • Salt to taste

Directions

  • First, make the beet tzatziki sauce. In a bowl, mix the beets, dill, 1 teaspoon of garlic, ¾ cup of yogurt, and ¼ tsp. pepper until combined. Set aside.
  • In a separate bowl, mix the zucchini, onion, oregano, and the remaining garlic, pepper, and Greek yogurt until combined.
  • Form 8 small patties using the mixture, making a small pocket in the center of each patty.
  • Generously coat a large skillet with cooking spray, and turn the heat up to medium-high. Place the patties into the pan and cook for about 5-6 minutes, flipping once or twice until golden brown on both sides and cooked through—this should take around 4 more minutes.
  • Serve the sliders on toasted whole-grain slider buns and top with turkey slices, finishing each off with a generous slather of the beet tzatziki sauce.
