Chicken Shawarma


 

Ingredients

For the chicken shawarma:

  • 3 and 1/2 cups (roughly 17.5 oz.) chicken, sliced
  • 3/4 cup plain yogurt
  • 2 lemons, juiced
  • 1 tbsp. garlic paste
  • 1/2 tsp. curry powder
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. allspice
  • 1/2 tsp. paprika
  • 1/2 tsp. cinnamon powder
  • 1 tsp. oil

Pita bread

  • Salt and pepper to taste
  • For the shawarma sauce:

  • 1/2 cup plain yogurt
  • 1 tsp. garlic paste
  • 1 tsp. tahini
  • Dash of lemon juice
  • Salt to taste

Directions

  • Combine the yogurt, lemon juice, garlic paste, curry powder, cayenne pepper, allspice, paprika, and cinnamon in a bowl. Marinate the chicken slices for 4 hours in the mixture.
  • Heat the oil in a skillet over low-medium heat. Add the chicken slices and cook for 8 to 10 minutes, until cooked through.
  • Combine the shawarma sauce ingredients in a separate bowl and stir to combine.
  • Take the pita bread and spoon in the cooked chicken.
  • Drizzle with the shawarma sauce and serve immediately. Feel free to add extra veggies to your shawarma for extra low-calorie goodness—we like onions, tomatoes, some parsley, and maybe a couple of chili peppers to give it some extra heat!

 

Grilled Honey Lime Chicken Kebab

Ingredients

  • 2 boneless, skinless chicken breasts, cut into cubes
  • 1/4 cup low-sodium soy sauce
  • 3 tbsp. honey
  • 2 limes, juiced
  • 1 tsp. garlic powder
  • Salt and pepper to taste

Directions

  • Combine the soy sauce, honey, lime juice, and garlic powder in a bowl. Add the chicken cubes to the mixture and marinate for at least 1 hour.
  • Once the chicken has finished marinating, thread it onto skewers.
  • Preheat your grill or broiler to low heat. Grill or broil the kebabs for 10 minutes or until cooked through, turning occasionally.
  • Remove the kebabs from the grill and serve with a sprinkle of salt and pepper.

 

Avocado Chicken Salad

Ingredients

  • 1/4 rotisserie chicken, shredded
  • 1 avocado, diced
  • 1 lime, juiced
  • 1/4 cup red onion, chopped
  • 1/2 jalapeño pepper, diced
  • 2 tsp. olive oil
  • Fresh cilantro, chopped (optional)
  • Dash of salt and pepper

Directions

  • Mash the diced avocado in a bowl with the lime juice. Season with salt and pepper to taste.
  • Add the shredded chicken, red onion, cilantro (if using), and jalapeño pepper to the mashed avocado.
  • Drizzle with olive oil and season to taste. Best when served immediately.

 

Chicken Enchilada Bowl

Ingredients

  • 1 lb. chicken thighs, boneless and skinless
  • 1 can (4 oz.) green chiles, diced
  • 3/4 cup enchilada sauce (store-bought)
  • 1/4 cup onion
  • 1 avocado, diced
  • 1/4 cup pickled jalapeños
  • 1/2 cup sour cream
  • 1 tomato, chopped
  • 1 cup cheese, shredded (a mild cheddar is best)
  • 2 tbsp. oil
  • 1/4 cup water

Directions

  • Sear the chicken in a skillet with the oil over medium-high heat.

  • Once the chicken is lightly browned, add the enchilada sauce, water, diced green chiles, and onion to the pan.
  • Reduce the heat to low and simmer, covered, for 20-25 minutes.
  • Take the chicken out of the pan and shred using two forks before adding it back to the pan. Simmer for an additional 10 minutes, uncovered, stirring often.
  • To serve, layer the chicken in a bowl with the diced avocado, pickled jalapeños, tomato, sour cream, and cheese.

 

Chicken Spring Rolls

Ingredients

  • 2.2 lbs. chicken, minced
  • 1.1 lbs. spring roll wrappers (store-bought)
  • 1/2 tsp. curry powder
  • 1 tsp. garlic
  • 1 chili pepper, chopped finely
  • 3 spring onions, chopped
  • 1/4 cup kecap manis (sweet soy sauce)
  • 1 carrot, grated
  • 1 zucchini, grated
  • 3 tbsp. oil

Directions

  • Heat the oil in a large skillet over medium-high heat. Brown the chicken and, once cooked through, stir in the garlic, curry powder, chili pepper, carrots, zucchini, and spring onions.
  • Cook until the vegetables are soft, then add the kecap manis and cook for an additional 1-2 minutes.
  • Transfer the chicken mixture to a bowl and cool slightly.
  • Take one spring roll wrapper and place it on a clean work surface. Spoon 2-3 tablespoons of the chicken mixture onto the lower third of the wrapper. Fold in the sides and roll up, pressing gently to seal.
  • Repeat with remaining wrappers and filling.
  • Serve immediately with extra kecap manis or sweet chili sauce for dipping.

 

Chicken, Cheese, and Poached Egg Sandwich

  • Poach the egg in a saucepan of simmering water for 3-4 minutes.
  • Heat the chicken slice in a non-stick skillet over medium heat.
  • Place the shredded cheese on the hot chicken slice and cook until the cheese is fully melted. Set aside.
  • Toast the bread until golden brown and top with the melted cheese-chicken slice.
  • Top with the poached egg and sundried tomatoes, then season to taste. Serve warm!
