Mac & Cheese Sub Sandwich


  • 4 oz. Buddig Original Beef
  • 4 oz. Buddig Ham (any flavor)
  • 4 oz. Buddig Turkey (any flavor)
  • 12 oz. French baguette - soft and large
  • 1 box macaroni and cheese
  • 4 oz. bread and butter pickle
  • 1/4 head lettuce - shredded or torn
  • 1 cup mayonnaise
  • 1 ea. red pepper - roasted
  • 1 clove garlic - minced
  • 1 oz. lemon juice
  • Salt & pepper to taste

  • Prepare the macaroni and cheese according to instructions on box.
  • Slice baguette in half length-wise and, taking bottom half, make a trench by removing some of the bread. Reserve the bread pieces for the remoulade sauce if necessary.
  • Make a remoulade sauce by placing the mayonnaise, roasted red pepper, garlic and lemon juice in a food processor and purée. If the sauce is too thin, add some of the bread to achieve desired thickness. Add salt and pepper to taste.
  • Fill the trench with the macaroni and cheese, and begin layering the Buddig Beef, Ham and Turkey on the sandwich.
  • Add the bread and butter pickles and lettuce to sandwich.
  • Spread the remoulade sauce over the top portion of the baguette and top the sandwich.
  • Slice the sandwich into four portions and serve.
