  • 2 tbsp cream cheese
  • 2 tbsp fresh parsley, chopped (for garnishing)
  • 1 tbsp olive oil
  • Salt and pepper to taste

DIRECTIONS:

  • Preheat the oven to 375°F (190°C). Clean the mushrooms and remove the stems to create a hollow in each mushroom cap. 
  • In a mixing bowl, combine the minced beef, shredded cheddar cheese, grated Parmesan cheese, cream cheese, olive oil, salt, and pepper. Mix well until all ingredients are evenly melded. 
  • Fill the mushroom caps with the beef and cheese mixtures. 
  • Place the stuffed mushrooms on a baking sheet lined with parchment paper or a lightly greased baking dish. Bake them in the preheated oven for 15-20 minutes or until the mushrooms are tender and the cheese is melted and slightly golden.
  • Once done, garnish with fresh parsley before serving.  

 

Grilled Asparagus with Ham Wraps

  • Prepare the asparagus by trimming off the tough ends. Toss the asparagus spears in olive oil and season with salt and pepper to taste.
  • Wrap each asparagus spear with a slice of thinly sliced ham, starting from the bottom and spiraling upwards.
  • Preheat your grill to medium-high heat.

  • 2 tbsp avocado oil (or any keto-friendly cooking oil)
  • 2 tbsp soy sauce 
  • 1 tsp garlic, minced
  • 2 medium-sized bell peppers, finely diced
  • Salt and pepper to taste

DIRECTIONS:

  • Heat a large skillet or wok over medium heat and add the avocado oil. Once hot, put the minced garlic and sauté for about 30 seconds until fragrant.
  • Stir-fry the cauliflower rice and bell peppers in the skillet for 3-4 minutes until cooked.
  • Add the grilled chicken breast strips and soy sauce to the skillet. Mix everything until well combined. Season with salt and pepper to taste.
